Dates and Nuts Laddoo-Energy Bites

In the middle of our busy lives and trying to eat healthy calories, we all need that quick snack which satisfies our cravings but yet isn't ruining our diet or healthy choices.This is one such recipe, there is no added sugar in this recipe and has a dose of healthy fats and a good fiber, magnesium, potassium and antioxidant boost from the dates.This can also be consumed if you are trying to add weight on skinny kids or by pregnant women to provide a nutritious diet to the offspring.

Ingredients:
1 cup mixed nuts(I used cashews, pistachios, macadamia nuts, almonds, walnuts)
1 cup pitted mejdool dates
small pinch of salt
1 tablespoon ghee

Procedure:
1.Heat a pan and toast all the nuts stirring occasionally to make sure they don't burn for about 15 minutes.Turn off and let cool completely.

2.Take the nuts,salt and dates in a food processor and pulse them until they reach a coarse crumb texture.

3.Take handfuls of the mixture and roll into balls by applying ghee on your palm so it doesn't stick to your hands and rolls easily.Store in airtight container and enjoy whenever you like to.

Tips:
You can also roll the finished laddoos in rajgira(amaranth) or desiccated coconut for additional texture.
You can also add raisins etc to the mixture.
