Chai Spiced Cookies

My classmate in school loves the Indian Chai. She always keeps asking for Chai. In many of the Coffee Chains like Starbucks, Peets coffee etc Chai has become a famous drink.Although they call it Chai tea- which actually means tea tea, because Chai means tea. I remember waking up to my mom and dad with a hot cup of chai in their hands. My mom loved to drink the Chai made by my dad. With Christmas around the corner, what better time to make a cookie from the Indian Chai spice.This is a basic cookie flavored with Indian Tea and Chai Masala.This makes a perfect accompaniment to dunk in your coffee or holiday drinks.

Ingredients:
1/2 cup brown sugar
1/2 cup granulated sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
1 egg
1 1/2 cups all purpose flour
1/2 cup chopped cashew nuts
2 tablespoon Darjeeling tea powder(finely ground)
2 teaspoon Chai Masala

Procedure:
1.Heat oven to 350F.Cream butter and sugars until the sugar has completely incorporated.

2.In a bowl Sieve the flour, salt, soda, tea powder, Chai masala and keep aside.

3.Add the egg to the butter mixture and mix until incorporated.

4.Add the flour mixture and mix until just incorporated.Fold the Cashew pieces.Scoop cookie balls and bake in oven for 12-15 minutes, just until the edges start to brown.Cool for 4 minutes and store in an airtight jar.


Tips:
You can keep your cookies soft by keeping a slice of bread in the container of the cookies.
You can also add pistachio nuts instead of the cashews.
Adjust the Chai masala and tea to your taste in the cookies.
