Pineapple Upside DownCake

Pineapple Upside Down Cake is a single layer cake baked on a bed of brown sugar,butter and pineapple and served upside down once it has baked.The pineapple, brown sugar and butter caramelize into a golden syrup during the baking process and ooze into the cake thus making a scrumptious dessert.

Ingredients:
For the caramel base
1/4 cup butter at room temperature
2/3 cup packed brown sugar

For the Cake
1/3 cup butter at room temperature
2 1/2 tablespoons vegetable oil
1/3 cup whole milk
2 teaspoon Dark Rum
2 teaspoons lemon juice
4 round slices ripe pineapple
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
Maraschino cherries

Procedure:
1.Preheat oven to 350F. Cream the 1/4 cup butter and brown sugar and then transfer the mixture to the bottom of a 9 inch round pan.


2.Place a round pineapple slice in the center and then the halves around it to make a nice design.You can place the cherries in between for color.


3.Now cream the 1/3 cup butter and sugar until well combined.

4.Add the rum,lemon juice and vanilla extract and mix until combined.

5.Add the eggs and mix slowly until combined.

6.Sift the flour, baking powder and salt.

7.Add the milk and oil to the egg mixture and mix until combined, then add the flour and fold until combined, do not over beat.

9.Transfer the batter to the pan with pineapple and spread evenly over the pineapple.Bake for 35-45 minutes or until toothpick inserted in center comes out clean.


10.Let cool for 15 minutes and carefully flip onto a serving plate.



Tips: 
Make sure all your ingredients are at room temperature.
You can serve warm with a dollop of caramel or butterscotch icecream.
