A popular breakfast dish from Karnataka, India.Akki Rotti meaning Rice bread, rice flour is mixed with coconut and little spices and pan roasted to form a crispy breakfast bread.This is another dish Im trying out of the cookbook sent by mother in law of Karnataka Cuisine.Husband said its very authentic.

2 cup rice flour
1 cup grated fresh coconut
2 teaspoon cumin seeds
6 green chili minced
3 teaspoons ghee
handful cilantro chopped finely
1/3 cup finely diced onions
4 teaspoons oil to fry roti.
salt to taste
Procedure:
1.In a bowl take all the ingredients except oil and mix well until a crumb is formed.Add about 1/2 cup of warm water and knead well to form a dough.Divide the dough to 6 equal portions.
2.Smear oil in a small saute pan, take a portion of dough and with your hands start pressing so that it forms a flat pancake.
3.With your finger make small holes so you can apply oil while frying.
4.Turn on the flame on high and when you hear a sizzle turn it down to medium and let cook until crispy for about 1-2 minutes.Add a drop of oil in each hole.
5.Flip and let cook on the other side.Take off the stove and serve hot with your favorite chutney.
Tips:
While spreading the roti make sure the pan is not hot and you spread it evenly.
You can also spread the roti on a banana leaf of parchment paper and transfer it to a hot pan to cook.Transfer gently so it doesn't break.
