Macadamia nut and Coconut Energy Bars

Most folks struggle to eat breakfast these days due to their busy schedules.Learn how to make your own delicious breakfast bars at home without all the added  or artificial sugars and artificial preservatives and additives.These are quick and easy to make and to grab and go when you are crunched for time in the morning.With all the good fats in the bar you will also get your fix of healthy fats into your diet.

Ingredients:
1 cup macadamia nuts
1 cup unsweetened coconut
1/3 cup craisins or any dry fruit mix
1/3 cup oats
1 teaspoon coconut oil
1 cup pitted mejdool dates
1/4 teaspoon salt
1 tablespoon honey

Procedure:
1.Slightly toast the macadamia nuts and oats separately on a dry pan for a minute and keep aside.


2.Pulse the oats in the food processor to a coarse texture.


3.Add the remaining ingredients and honey and pulse until the mixture starts to come together in a lump.




4.Line a 9 by 9 baking sheet and apply the coconut oil on the bottom and transfer the mixture to it, press down firmly with your fingers to form a sheet.



5.Cover with plastic wrap and refrigerate for 30 mins or so before cutting them into bars and cover and store in parchment paper in the refrigerator.




Tips:
Make sure your dates have no pits or your food processor will damage
You can also add dehydrated pineapple,flax seeds, chocolate chips etc to this.
