Blueberry Malai Peda

"Neela Megha Sareera" they call him, comparing his body with a hue of the blue clouds.As we celebrate Sree Krishna Janmashtami, I was thinking what new dish can I prepare which embodies the festival.So I decided to make Malai Peda but with blueberries added in it, symbolizing the blue hue of Lord Krishna.

Ingredients:
1 cup Ricotta cheese or home made paneer(pulsed to fine crumbles)
1 cup dry mawa powder
1 can sweetened condensed milk
1/4 cup sugar(depending on taste)
1/4 teaspoon cardamom powder
1 Tablespoon Ghee
6oz blueberries(pureed)
1 teaspoon blueberry extract
Almonds for garnish

Procedure:
1. Heat 1/2 Tablespoon of ghee in a pan and add the ricotta cheese and start mixing gently on a medium heat, the cheese will melt liquify and then start to form together.

2.Add the blueberry puree and mix well till combined.


3.Now add the mawa powder and mix well until combined and let it come together and lose moisture.


4.Now add the condensed milk,blueberry extract and if required add sugar and keep stirring until all the mixture comes together in one single lump and remove from stove and transfer to a plate.




5.Make small roundles of the dough after it has cooled and then press them down to discs and decorate with almonds.


Tips:
It is  important to keep stirring after you add the condensed milk or it will burn.
The blueberries themselves do not impart a lot of flavor into the dish hence I used blueberry extract, you can also use blueberry jam or preserves for a more concentrated flavor.
