Mexican Street Corn-Elotes

I wanted to introduce my new love to you all.One day my gardener frantically knocks my door and hands me two ears of corn on a stick and say eat it eat it quickly. Then I found my love,it was so delicious.I couldn't find the guy who sold them to him to find the recipe. So I decided to experiment on my own and I improvised. With so many layers of flavors hitting your palette it was a carnival in my mouth.

Preparation time20 minutes
Serves2
Serving Size1 corn
Calories Per ServingApproximately 165 per serving
DifficultyEasy

Ingredients:
1 tablespoon mayonnaise
1 tablespoon sour cream
salt to taste
1/4-1/2 teaspoon Chipotle pepper powder
1 lemon wedge
1 tablespoon cotija cheese
2 ears of corn

Procedure:
1.In a steamer, steam the corn for 10 minutes.

2.Stir together the mayonnaise, sour cream and salt in a small bowl.

3.Heat the grill  and place the corn on the grill and close the lid. Rotate the corn every couple of minutes until you get an even grill marks all around the corn, this should take around 10 minutes.

4.Remove from the grill and brush the corn with a thin layer of the mayonnaise mixture and sprinkle the cojita cheese, chipotle powder and the lemon juice over the corn and serve warm.

Tips:
You can do just the grilled corn for around 20-25 minutes and skip the steaming
For an Indian twist you can use chat masala instead of the chipotle powder
