So for this birthday I received a Kitchen Aid Stand mixer from my brother and sister in law,Oh boy I was on cloud nine,it really make things easy to mix while I prep my other ingredients.I do bake quite a lot so I was glad to have one of these.I whipped up 3 cookie batters in 30 minutes,can you believe that? This recipe is a variation of a sugar cookies in which we substitute some of the flour with custard powder whose primary constituent is cornstarch which gives the cookies a melt in your mouth texture.
Ingredients:
1/2 cup unsalted butter at room temperature
3/4 cup sugar
2 1/4 cup all purpose flour
3/4 cup mango custard powder(you can use your favorite flavor)
1 egg(room temperature beat with a fork until well combined)
Procedure:
1.Preheat oven to 350 F. Take butter and sugar in a bowl and beat until well combined(for about 2-3 minutes)
2.In a different bowl sift flour and custard powder and keep aside.
3.Add the egg and mix just until combined and add the flour mixture and mix just until combined.
4.Shape into roundles and roll in sugar and place on a cookie sheet.
5.Press down with a fork to form an indentation and bake for 14-15 minutes.
Tips:
You can add your favorite flavor of custard powder.
Do not knead or overmix the dough.
Look for the texture of the dough, if you feel its too soft more than what is shown in the pictures, you may have to add one or two tablespoons of flour, this happens due to the difference in moisture content in the eggs and butter.
Test out one cookie, let it cool completely and eat it to see if you get the right texture and doneness before you ruin the whole batch.
