Mexican Black Bean Salad

This is a simple,healthy and super delicious salad full of protein,good fats,vegetarian and super rich in fiber.The avocado gives a creamy and delicious dressing.
Preparation time:15 minutes
Serves:2

Ingredients:
2 cups chopped lettuce of your choice(I used iceberg)
1/2 cup diced onion
1/2 cup corn kernels
1/2 cup cooked black beans
1/2 cup diced tomato
1/4 teaspoon cumin powder
1 avocado
1 jalapeno
salt to taste
1/2 teaspoon cajun seasoning
1/4 cup diced ripe mango
1 garlic clove
juice of 1 lemon
1/4 teaspoon black pepper powder
1/4 teaspoon cumin powder
1/4 teaspoon coriander powder
1 bunch cilantro

Procedure:
1.For the dressing, take the cilantro,avocado,garlic,lemon juice,mango,black pepper powder,jalapeno,cumin powder,coriander powder and salt in a blender and blend until smooth.


2.Roast the corn and drained black beans on the stove and sprinkle the cajun seasoning on it.




3.In a bowl take the chopped onion and tomato,corn and black beans and mix,Now add the ground avocado puree and toss along with the lettuce until evenly coated and serve.




Tips:
Additional add ons for this can be diced pickled jalapenos,tortilla strips,sour cream,grilled chicken,bell peppers,queso fresco etc.
This recipe yields a thick dressing,if you like a dressing of the pouring consistency,use half the avocado and add buttermilk to get the consistency you desire.
Adjust the mango and jalapeno to your sweet and spice tastes.
Consume immediately,because the avocado turns black due to oxidation from exposure to the air.
If you have a BBQ grill,grill the corn before taking the kernels,that gives the best corn taste to the salad.
