Gongura Pachadi

Gongura Pachadi or Sorrel leaves chutney is every Andhrites favorite food.The leaves are sauteed in oil and ground along with a spicy tempering making it a tangy temptation.
Preparation time:20 minutes
Serves:8

Ingredients:
4 cups loosely packed sorrel leaves(gongura)
1 teaspoon roasted chana dal(putnalu)
1/2 teaspoon coriander seeds
1/2 teaspoon fenugreek seeds
7 green chili
7 red chili
salt to taste
1 sprig curry leaves
1 1/2 teaspoon mustard seeds
1 1/2 teaspoon cumin seeds
1 teaspoon chana dal
1 teaspoon urad dal
1/3 cup diced onion
4 teaspoons oil

Procedure:
1.Heat 2 teaspoons oil,add green chili,red chili,coriander seeds,fenugreek seeds,1/2 teaspoon cumin seeds,1/2 teaspoon mustard seeds and roast for 2 minutes and take aside and let cool.

2.Once cooled,Grind the above roasted mixture to a fine powder

3.In the same pan add the gongura leaves and saute until soft.

4.Add the leaves to the ground powder and grind to a semi smooth paste.

5.In the same pan add the remaining oil and add the mustard seeds and let crackle and add urad dal ,chana dal, garlic and curry  leaves and let splutter.

6.Add the ground sorrel leave paste to this mixture and saute for 1-2 minutes and turn off the stove and let cool.


Tips:
Serve with diced raw onion.
If you don't mind the oil add more it tastes better with more oil.

  1. I have different way for same recipe which my grandma does. Boil gongura and green chillies in water. Smash it slightly to paste. Add garlic, peanuts, onions, curry leaves, red chillies, mustard seeds
