Kosambari is an indian salad made with moong dal(moong beans) soaked in water.Its a very ancient dish traditionally used to lose weight,low in calories, at the same time providing lot of protein,fiber and nutrition.
Preparation time:10 minutes

Ingredients:
1/2 cup Moong dal(soaked in water for 2 hours and drained and rinsed)
1/3 cup grated Carrot
1/3 cup diced cucumber
1 tablespoon grated Coconut(optional)
2 tablespoon chopped Coriander leaves
juice of 1/2 Lemon(adjust to your tanginess level)

Procedure:
1.Combine all the ingredients in a bowl and serve.
Tips:
Add the lime juice in the end just before eating so it doesn't oxidize,else it will become bitter.
It is best to eat this at room temperature,but you can also serve it chilled.
This is the basic ayurvedic recipe,if you like more zing to the recipe heat a pan with 1 teaspoon oil and leave a tempering of mustard seeds,cumin and curry leaves and add to the mixture,stir and serve.
You can also add grated beetroot,pomegranate arils,whole moong bean soaked in water and sprouted etc.
When trying to lose weight you can eat about 2 cups of this for breakfast(without the oil) for a few weeks.
