Dhokla is a very famous Gujarati dish made of coarse besan(chickpea) flour, eaten for breakfast or snack.It is very quick and easy to prepare and quite nutritious too.
Preparation time:25 minutes
Serves:4(about 8 1 inch cubes)
Ingredients:
1 cup chickpea flour( Laddoo besan will give better results but regular will work too)
1/2 inch ginger (grind to paste with 6-8 green chili)
10 green chili(chop 2-4 to thin slices)
2 teaspoons sugar
2 teaspoon eno fruit salt
2 tablespoons oil
salt to taste
1 sprig curry leaves
2 tablespoons yogurt
2 teaspoons mustard seeds
Procedure:
1.Take a bowl and add the flour, ginger green chili paste,salt,yogurt,1 teaspoon sugar and mix well with about 1/4 cup water,1 tablespoon oil to make a dough.
2.Set a vessel to steam,I have used a rice cooker with a steamer in which I put a greased bowl.Once ready add little more water to make dough to give a thick drip consistency.Add the fruit salt and mix well.Transfer the dough to the greased bowl and place in steamer and steam for 20 minutes.
3.In a pan heat the remaining oil,add the mustard seeds and let crackle,add the green chili and curry leaves and let crackle,now add the remaining sugar and 2 tablespoons water and turn off the stove.
4.Pour this liquid on the steamed dhokla evenly and cut into pieces and serve.
Tips:
I dont like it too sweet,this is generally made sweeter but I reduced the sugar and increase green chili to make it savory.Adjust to your taste.
You can also add cumin seeds in the dough for added flavor.
This can be served with pudina or cilantro chutney.
