Spanakopita

Spanakopita is a greek savory spinach pie.These are made in large sheets and then cut into individual servings or can be made into triangles like the Indian samosa.I added some sundried tomatoes and pine nuts for some extra flavor to the dish.
Preparation time:60 minutes
Serves:24 spanakopitas

Ingredients:
12 oz Spinach leaves(about 6 cups)
1 medium onion diced
3/4 stick butter or 1/2 cup olive oil
1 pack phyllo pastry sheets thawed
2 eggs
2 cups feta cheese
3 tablespoons sun dried tomatoes diced
1/ 4 cup roasted pine nuts
salt to taste
6 green chili minced
1 teaspoon sriracha
1 tablespoon all purpose flour

Procedure:
1.Preheat oven to 350 degrees F.Heat 1 tablespoon olive oil in a pan and add the green chili and onions and saute for 3-4 minutes.

2.Add the sundried tomatoes,spinach and saute until soft and let the water evaporate.

3.Now sprinkle the flour and then turn off the flame and add the egg,roasted pine nuts and feta cheese,salt and sriracha and combine.


4.Cut the phyllo sheets into 2*8 strips and apply melted butter.Lay another layer of phyllo sheet on top.


5.Place a teaspoon of the spinach filling in one end and fold into triangles.Start with one corner and fold it in 45 degrees,then take the other corner then fold it in 45 degrees and repeat until you reach the other end,apply butter and seal the end.repeat for all phyllo sheets.



6.Place on a baking sheet and bake for about 25-30 minutes or until golden brown.


Tips:
You can also add other fresh herbs like parsley,oregano and dill to the filling.
You can also use ground chicken,,pork,lamb,beef etc in the filling,you have to saute the meat after the onions for about 7-10 minutes depending on the meat before adding the spinach to it.
