Heres a muffin recipe rich in fiber with bananas and oats with a crispy crust and moist interior.

Serves:12 large muffins
Ingredients:
1 1/2 cups oat bran(you can also use regular rolled oats)
1 1/2 cups all purpose flour
2 large ripe bananas mashed
pinch of salt
2 eggs
1/3 cup vegetable oil
1/2 cup walnuts roughly chopped
1/4 cup raisins
1/2 cup brown sugar
1/4 cup sugar(use 1/2 cup for more sweeter version)
1 1/2 teaspoon baking soda
1 teaspoon baking powder
2 tablespoons orange marmalade(or zest)
1/2 teaspoon vanilla extract

1.Preheat oven to 350 F.Take the oat bran in a bowl,sift in the flour,baking powder,baking soda and salt.
2.Take the eggs,brown and white sugar,orange marmalade,vanilla and whisk for 2-3 minutes.
3.Add the mashed banana and oil and mix once.
4.Add the walnuts and raisins and mix.
5.Now add the flour and mix once.Do not over mix.Scoop the dough into muffin cups and bake for 23-24 minutes until toothpick inserted in the center comes out clean.
Tips:
You can use oats instead of oat flour.
You can add an extra banana and eliminate the white sugar.
