Raitha

Raitha is a yogurt based sauce gently spiced and commonly served with Biryani or as a dip with meats like kebabs.This is used to cool the palate when eating rich or heavy or spicy foods.
Preparation Time:10 minutes
Serves:8

Ingredients:
1 cup yogurt
1/2 cup cilantro leaves chopped
1/2 cup finely diced onion
salt to taste
pinch cumin powder

Procedure:
1.Take all the ingredients in a bowl.



2.Mix well with a spoon.Add water to thin it to the consistency you desire.



Tips:
This tastes best if served chilled.
You can add other ingredients like minced green chili,finely diced onion,dill,diced cucumber,grated carrot,boondi(chickpea flour pellets).
You can also add a tempering of mustard seeds for added flavor.
