Carrot Halwa-Gajar Halwa

Carrot halwa or Gajar Halwa is one of the most popular Indian desserts in which grated carrots are cooked in milk and ghee and made into a sweetened pudding.This is regularly served in all Indian restaurants in the US.

Ingredients:
4 cups grated carrot
2 cups full fat milk warmed
1/2 cup khoya(mawa/kova)
3/4 cup sugar
1 tablespoon ghee + 1 teaspoon
1 tablespoon slivered almond,pistachio and cashew
1 tablespoon raisins

Procedure:
1.Heat 1 tablespoon ghee in a pan and roast the grated carrot on medium flame until they lose a little moisture,there shouldn't be any water collected at the bottom(about 8 minutes).Stir so that the carrots don't burn.


2.Now add the milk and let the milk reduce down to half.

3.Add the kova and sugar and mix.


4.In a separate pan take the nuts and roast them separately in 1 teaspoon ghee and add it to the carrots and mix.


5.Now turn the heat to a high and stir continuously for 2 minutes and turn off the stove.(this step is optional but it really helps the sugar caramelize around the carrots and enhances the taste).


Tips:
Enjoy warm or cold.
Can also be served with vanilla ice cream.
You can also use condensed milk instead of the milk to skip the process of reducing down and adds more richness to the dessert as well.
Make sure the water in the pan that oozes from carrots is gone otherwise the taste isn't very appealing.
Since it is a milk product store it in the refrigerator.
You can also soak dates in water and grind them without the water to add to halwa instead of the sugar.
