Zucchini and Sweet Potato Corn cakes

Also called as latkes. vegetable pancakes are pan fried patties with vegetables like carrots,zucchini etc.Instead of pan frying these,you can also bake them.
Preparation time:30 minutes
Serves:20 cakes

Ingredients:
1 zucchini grated
1 sweet potato grated(microwave for 5 minutes to lightly tenderize)
1 carrot grated
1/2 cup corn kernels
1 teaspoon cajun seasoning(you can also use 1 teaspoon chaat masala+1/2 teaspoon red chili powder)
salt to taste
6 tablespoons chickpea flour(besan)
2 tablespoons oil

Procedure:
1.Take all the ingredients except the oil in a bowl and combine to form a thick mixture.


2.Heat 1 teaspoon oil in a pan and place about 2 tablespoons of mixture on the pan like pancakes and fry for 5 minutes or until each side is lightly browned.Flip the pancake and fry on the other side on medium heat, adding more olive oil if needed.



Tips:
Serve with your favorite sauce or ketchup
You can also add 1 egg to the mixture.
You can also bake them in the oven on a well oiled foil for 15 minutes on each side at 375 degrees fahrenheit.
