Also called as latkes. vegetable pancakes are pan fried patties with vegetables like carrots,zucchini etc.Instead of pan frying these,you can also bake them.

Ingredients:
1 zucchini grated
1 sweet potato grated(microwave for 5 minutes to lightly
tenderize)
1 carrot grated
1/2 cup corn kernels
1 teaspoon cajun seasoning(you can also use 1 teaspoon chaat
masala+1/2 teaspoon red chili powder)
salt to taste
6 tablespoons chickpea flour(besan)
2 tablespoons oil
Procedure:
2.Heat 1 teaspoon oil in a pan and place about 2 tablespoons
of mixture on the pan like pancakes and fry for 5 minutes or until each side is
lightly browned.Flip the pancake and fry on the other side on medium heat, adding more olive oil if needed.
Tips:
Serve with your favorite sauce or ketchupYou can also add 1 egg to the mixture.
You can also bake them in the oven on a well oiled foil for 15 minutes on each side at 375 degrees fahrenheit.
