Ugadi pachadi is prepared to
signify a balanced life with each taste signifying an element in human life. Neem
flowers for bitterness, signifying Sadness, Jaggery for
sweetness, signifying Happiness. Green Chilli for spice,
signifying Anger,
Salt for saltiness,
signifying Fear,
tamarind for sourness, signifying Disgust, Raw Green Mango for
its astringent, signifying Surprise.
According to Ayurveda there are 6 tastes. Each taste has its
significance on the Doshas of the body.
Sweet: Soothes and satisfied the body, also builds body mass. Balances
Vata and Pitta doshas, excess aggravates Kapha dosha
Sour: Stimulates the appetite and aids digestion ,balances Vata,
aggravates Pitta and Kapha
Salty: Enhances the appetite, enhances other tastes, balances Vata, excess
increases Kapha and Pitta elements
Pungent: Promotes sweating and clears the sinus passages, balances Kapha,
excess irritates Vata and Pitta.
Bitter: Detoxifying to the system, balances Kapha and Pitta, excess increases
Vata and causes gas or indigestion
Astringent: balances Kapha and Pitta, excess intake increases Vata
Balancing all these flavors in the daily food keeps a man free of
disease.
Preparation time:10 minutes
Serves:1 cup of chutney
Ingredients:
1/2 cup of fresh raw mango grated along with the skin
1/2 teaspoon neem flowers(vepa puvvu)
2 tablespoon grated jaggery
1/4 teaspoon tamarind paste
1/4 teaspoon finely minced green chili
1-2 pinches salt
Procedure:
1.Take all the ingredients in a bowl.
2.Add 1 cup water and mix until jaggery is dissolved.
Tips:
If you can handle more bitter and spice you can add more neem leaves and chili
