Tiramisu Cake

I have posted a traditional tiramisu before.Here is a variation if you want it to hold in the shape of a cake.I have used ready made ladyfingers,I will do a post on how to make lady fingers at home at a later time.Ladyfingers are nothing but a type of sponge cake which is soaked in coffee and assembled with the mascarpone.For individual sized portion see Tiramisu recipe.
Preparation time:30 minutes+additional time for setting
Serves:1 9 inch round cake

Ingredients:
1 pack gelatin(I used knox)
5 egg yolks
8oz mascarpone
1 cup heavy whipping cream
1 pack of ladyfingers
2 cups powdered sugar
2 tablespoon cocoa powder
1 tablespoon +1 teaspoon coffee powder
1 tablespoon rum(optional)(I used kahlua)


Procedure:
1.Heat water in a pan,place another bowl over it and on low heat take the egg yolks in the top bowl and start whisking until you see a pale and viscous texture and remove from stove.




2.Add the mascarpone and 1 cup sugar to it and combine well.

3.Add the cocoa powder and 1 teaspoon coffee powder  and combine.

4.Melt the packet of gelatin in 1/4 cup water and mix until completely dissolved and keep aside and let cool.


5.Whisk the heavy cream with 1 cup of sugar until stiff peaks form.Add the gelatin to it just about when it starts forming peaks.The gelatin should be liquidy but not hot.




6.Fold the mascarpone mixture into the whipped cream.


7.Make about 6 tablespoons espresso with the coffee powder.(You can boil water and add the coffee powder).Add rum to this mixture after removing from the heat.

8.Now on a 9 inch springform pan place lad fingers on the bottom.Drizzle the coffee rum mixture.


9.Place a layer of the whipped cream-mascarpone mixture.


10.Lay another layer of ladyfingers on top.

11.Drizzle the coffee rum mixture.

12.Place a another layer of the whipped cream-mascarpone mixture.Leave in the refrigerator for about a day to set.

13.To assemble the cake,after a day remove the springfoam pan and place ladyfingers all around the cake and tie them together with a ribbon.



Tips:
You can make this as individual desserts(see recipe here) or as a trifle in a trifle bowl as shown below.

Assemble the dessert a few hours ahead for the ladyfingers to soak the coffee and become soft.
If serving to kids or pregnant ladies use the other tiramisu recipe.
