Sushi is a Japanese roll usually prepared with sticky rice which is coated in vinegar and some sort of seafood and vegetables.The following recipe is for a Quinoa sushi,it is not a traditional way of making sushi and is my play to reproduce the dish served at a local restaurant here called "vegetarian house" and I was able to replicate the taste.
Preparation time:30 minutes
Serves:12-18 sushi rolls
Ingredients:
1 1/2 cups uncooked quinoa
2 vegetable or chicken bouillon cubes
1 avocado
1/2 red bell pepper julienned
2 carrots julienned
10 strands rice noodles
3-4 nori sheets
1/2 cup jicama julienned
1 cup iceberg lettuce sliced into thin strips
2 teaspoons nori seasoning(furikake)
Procedure:
1.Cook the quinoa with 3 1/2 cups of water and bouillon cubes in a pressure cooker or a rice cooker.
2.Boil noodles in water and drain and keep aside.
3.Place the nori sheet on a surface(or sushi mat if you have one).Spread quinoa about 1/2 inch thick leaving the edges.
3.Sprinkle the furikake on the quinoa.
4.Place the vegetables and noodles on the edge of the nori sheet towards your side.
5.Now pick up the mat/sheet near you and start rolling the nori sheet inwards(away from you) until it forms a roll.Seal off the edges by applying some water.Sushi mat really helps rolling these here.
6.With a sharp knife cut them in 1 inch thick pieces an serve.
Tips:
You can serve it with soy sauce or sesame sauce(see recipe here)
You can also add bean sprouts,mushrooms etc as stuffing.
Julienning means cutting something into long thin strips like matchsticks.
