Arugula Salad

Arugula is a peppery green lettuce that is rich in vitamin c and potassium.Arugula was primarily used in Greek an Mediterranean dishes but now is popular in most american dishes as well in salads,pizzas etc.This is a perfect  and quick salad when you do not want to eat a lot of food and want a light dinner.
Preparation time:5 minutes
Serves:2

Ingredients:
10 kalamata olives
3 cups baby arugula
1/4 cup chopped walnuts
1/4 cup craisins(dried cranberries)
1/4 cup feta cheese
1/2 cup diced cucumber
1 Tablespoon balsamic vinaigrette(See recipe here)

Procedure:
1.Place all the ingredients on a bed of arugula greens and drizzle with balsamic vinegar.

Tips:
You can also use chopped strawberries instead of the craisins
You can also add some onions and diced tomatoes to the salad
Arugula is a peppery green so a little bit of sweetness from the craisins and tanginess from the balsamic helps balance the taste very well.
You can also add cooked chickpeas,grilled chicken or tuna
I normally use the fat free balsamic vinaigrette from Trader Joes it has no preservatives and is cheap and healthy.
Arugula can cause gas,bloating and cramps in the stomach for a few people so if you are not used to it,start with a small quantity.
