Ravioli with Marinara and Pesto Sauce

Ravioli is an italian pasta dish which is filled between two layers of pasta.There are a million varieties of filling ranging from meat,vegetables,cheeses etc.I will do a recipe on how to make homemade ravioli at a later time but this recipe uses pre made ravioli bought from the store.
Preparation time:15 minutes
Serves:2

Ingredients:
2 cups ravioli(you can use any kind ,I used Kale and Spinach Ravioli available at costco)
1/2 cup marinara sauce
1 teaspoon pesto
1 tablespoon sun dried tomatoes
1 tablespoon olive oil
3 garlic cloves
Vegetables of your choice(I used 1 cup of mixed bell peppers)
2 veggie/meat sausage links cooked and sliced(optional for protein)
1/4 teaspoon fresh ground black pepper(adjust as per your taste)
salt to taste
Red chili flakes(optional)
1 tablespoon grated parmesan(optional)

Procedure:
1.Heat oil in a pan, add the garlic and sundried tomatoes and saute for 1 minute.

2.Add the bell peppers and saute for 2-3 minutes. The vegetable should be cooked but still crunchy.

3.Add the marinara and pesto, sausage link slices, black pepper powder and salt and mix and let cook for 2 minutes on low flame.


4.In another pan bring water to a boil and add 2 cups of ravioli to it and cook for 3- minutes(or as per package instructions).



5.Drain the water from the ravioli.

6.Add the ravioli to the simmering sauce and mix gently and let cook for 1 minute on medium flame and turn off the stove. Sprinkle grated parmesan and chili flakes on top and serve.


Tips:

Ravioli doesn't take a lot of time to cook, so do not overcook it or it will come apart and the stuffing will ooze into the dish.
