Oven Roasted Plantains

I ran into this recipe when looking for Ghanian Red Red stew recipe.Normally it is a dish served with fried plantains,but i'm not a big fan of frying things so I decided to bake them.They tasted so good with the stew.
Preparation time:25 minutes
Serves:2-3

Ingredients:
2 ripe plantains
salt to taste
dash of black pepper powder
1 teaspoon oil

Procedure:
1.Preheat oven to 400F.Line a baking sheet with aluminium foil,grease the aluminium foil.
2.Peel the plantains and cut them into diagonal slices.



3.Coat them with oil and salt and pepper.


4.Lay them on a baking sheet and bake for 10 minutes on each side,ie after 10 minutes flip them over and cook for 10 more minutes.


Tips:
Do not overcook they will burn.
Plantains are high in fiber,do not eat too much or they can  make you run to the bathroom.
