Basic Vanilla Sponge Cake

Sponge cake is used as the base for most preparations of cakes.It is often covered with an icing like buttercream,chocolate ganache etc to complete a cake for special occasions.This recipe itself isn't too sweet so that it can balance the sweetness of the cream you use to cover it.
Preparation time:45 minutes
Serves:1 9 inch sponge cake


Ingredients:

1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
4 tablespoons milk
1 cup butter at room temperature(leave it outside for atleast 4 hours needs to be soft when touched but not melted)
1 teaspoon vanilla extract
5 eggs at room temperature(atleast 4 hours)
1 cup sugar

Procedure:
1.Preheat oven to 350 F.Layer the baking pan with parchment paper.

2. Sift the flour with baking powder, baking soda and salt 3 times.

3.In a large bowl take the butter and sugar and beat vigorously, for about 5-6 minutes until pale color and fluffy texture is obtained. Add 1 egg yolk and beat, add the next and beat, continue until all are done .



4.Whisk the egg whites in a bowl until medium peaks form.



5.Now put aside the hand mixer and take a spatula for mixing, add flour little by little and fold it in(do not beat here-folding means you take the spatula cut the batter in the center and turn your wrist clockwise so that the batter from bottom comes up, this makes sure the air bubbles in the butter and sugar are not gone, otherwise cake will be soggy),if it starts to thicken add milk little by little until a smooth batter is obtained.


6.Fold in the egg whites.

7. Add the batter to the pan and bake for 18-25 minutes or until toothpick inserted in center of the cake comes out clean. Remove from oven let rest for 5 minutes then remove from pan, let cool completely before cutting.


Tips:
Add more sugar if eating by itself,without any frosting.
