This is a cucumber flavored yogurt dip with herbs and spices
served with mediterranean dishes like gyros, kababs, falafels or as part of Mezze platter.
Preparation time:5 minutes
Ingredients:
2 cloves garlic
1/2 teaspoon salt
1/4 teaspoon black pepper powder
2 cups greek yogurt
1 cup cucumbers grated
handful of dill(I did not have dill so I used parsley and
cilantro)
Pinch of cumin
few drops of olive oil
Procedure:
1.Roast the garlic in some olive oil.
2. Take all the ingredients except greek yogurt in a food
processor and coarsely pulse it.If you do not have a food processor just finely
chop the cucumber and dill and mix the spices.
3.If you want a flowing sauce like in cacik pulse the greek
yogurt with the rest of the ingredients once and remove. If you want a thicker
sauce, take the greek yogurt in a bowl, add the pulsed ingredients prepared in
step 1 and mix with a spoon just until combined.
Tips:
Do not over pulse the ingredients or the yogurt,we will
still want the chunks of cucumber and dill in the yogurt.
