Tres Leches Cake

Tres Leches is a Mexican milk cake.Tres means three and Leches means milk,that uses heavy cream(or whole milk),condensed milk and evaporated milk.This liquid is poured onto the cake and thus making it a creamy deliciousness.
Preparation time:2 hours
Serves:12

Ingredients:
1 1/2  cup flour
6 eggs
1 1/4 cup sugar
1 teaspoon baking powder
1/3 cup milk
1 teaspoon bourbon vanilla extract
1 cup crushed pineapple(optional)
Tres Leches Ingredients:
12 fl oz evaporated milk
14oz condensed milk
1/2 cup heavy cream 
Whipped topping:(use double the below quantity if doing a layer cake)
1 Cup heavy cream(cold)
1 cup powdered sugar
1 teaspoon gelatin
1/4 cup warm water
1 teaspoon bourbon vanilla extract
12 Maraschino Cherries

Procedure:
1.Preheat oven to 350 degrees and line a 9inch spring foam pan or 2 9inch pans with parchment paper.

2.Sift the flour, baking powder and salt and keep aside.

3.Take the egg yolks in a bowl and add the sugar and vanilla and beat until pale.Add the milk and mix until combined.


4.In a separate bowl whisk the egg whites until soft peaks form.




5.Add the flour to the egg yolk mixture and mix until combined.


6.Fold in the egg whites until combined.Fold pineapple if using.



7.Transfer the mixture into the baking pan and bake for 45 minutes(if using springfoam pan) 35 minutes if using 2 9 inch pans.

8.Let the cake completely cool on a wire rack.


9.In a bowl mix the heavy cream, condensed milk and evaporated milk and keep aside.


10.In a separate bowl add the gelatin to the warm water and dissolve it.

11.Add the heavy cream, sugar, gelatin and vanilla and whisk until medium peaks form.Remember gelatin should be in liquid form before mixing into the heavy cream.


12.If you want to layer the cake, cut the cake in half.Gently pour 1 1/2 cups of the tres leches liquid onto the bottom half of the cake. Keep the cake in the pan while pouring the liquid, it will absorb all the liquid with half an hour.Keep the other  layer in a rimmed pan and pour 1 1/2 cups of the tres leches liquid on it evenly and let it soak for half hour until all the liquid has been absorbed.


13.Once all the liquid had absorbed, Place the bottom half on your serving round or stand and add a dollop of whipped topping on the bottom layer and spread evenly.

14.Place the upper half on the layered bottom half and cover with the rest of the whipped topping on top and serve with a cherry on top.


 Tips:
You can also add some toasted coconut on top if you like.
If not layering it you can directly pour the tres leches liquid on top of the cake in the pan and let it absorb the liquid for about half hour to 1 hour.
