Spinach sformato

Sformato is of italian origin and is similar to a custard/flan made savory.This can be made with any vegetable. The difference between baked eggs/frittata and sformato is really the texture.Baking in a bed of water gives it a soft flan like texture.
Preparation time:30 minutes
Serves:12

Ingredients:
10 Eggs
2 cups chopped spinach
1/2 cup Grated Parmesan Cheese(optional)
Oil to spray the pan
2 tablespoons breadcrumbs
salt to taste
1/2 teaspoon black pepper powder
2 tablespoons flour(optional)

Procedure:
1.Heat the oven to 375 degrees. Grease and coat the baking tin with bread crumbs

2.Whisk the eggs with salt.Add the spinach and cheese. If your mixture is runny add flour or more cheese.


3.Add the mixture to the baking tin. Place the pan in another pan with boiling water. Place them in the oven and bake for about 35 minutes,until toothpick inserted in center comes out clean.





Tips:
The baking tin should be of equal depth as that of your pan that you put water in. Ie when you place one in the other the water level should come upto the egg mixture level inside the first pan.
Other vegetables like broccoli ,zucchini can also be used.
