Paneer Bhurji

Bhurji is a scramble often made with eggs,this recipe is a variation with Paneer(Indian Ricotta Cheese) and is a delicious and quick curry to prepare.
Preparation time:25 minutes
Serves:4

Ingredients:
1/2 cup diced onion
1/2 cup diced green onion
2 pinches pinch of turmeric powder
6 green chili minced
1/2 teaspoon ginger garlic paste
1/2 cup diced tomatoes
1/2 teaspoon shan curry powder (or 1/2 teaspoon dhaniya powder+1/4 teaspoon garam masala powder)
1 cup finely crumbled Paneer
salt to taste
1/4 teaspoon red chili powder(optional ,adjust as per your spice levels)
2 teaspoons oil

Procedure:
1.Heat the oil in a pan and saute the green onion,onion, turmeric powder,salt and green chili for 3-4 minutes until onions are soft.Add ginger garlic paste and saute for 2 more minutes.

2.Add the diced tomatoes and saute until they are soft.

3.Add the spices and mix well for 1 minute.

4.Now add the grated paneer and mix well, cook for a minute until paneer becomes lightly soft and the masala is well coated to the paneer and turn off the stove.

Tips:
Do not overcook the paneer,it will  melt and turn to a huge lump.The bhurji is tastier when it is dry.
This can also be used as a sandwich filling and also filling for paratha.
This goes well with rotis and also rice.
