Mushroom Gravy

Gravy in the American context is served with a roasted meat or mashed potatoes and is a sauce that is made from the juices from meat or vegetables. There are different types of gravy like beef, turkey, mushroom etc.
Preparation time:20 minutes
Serves:6

Ingredients:
2 cup diced brown mushrooms(I used crimini)(slice if leaving the pieces in the gravy)
1 cup water
1 tablespoons olive oil
salt to taste
Fresh ground black pepper
1 bay leaf
1/2 cup diced onion
1/4 cup dry white wine
1/3 cup all-purpose flour
2 cups vegetable broth or mushroom broth or 2 cubes bouillon cubes
1 teaspoon soy sauce

Procedure:
1.Heat the olive oil and add the bay leaf.

2.Add the  onions and mushrooms and wine and saute for 3-4 minutes until the onions are soft and done and the wine is cooked out and almost evaporated.



3.Add in the broth or the  bouillon cubes with 2 cups water. Add black pepper powder.

4.Mix the flour in a cup of water and mix without lumps and add it to the pan and also add the soy sauce and stir constantly until gravy has thickened, about 3 minutes.


5.Strain through a strainer and set aside. You can either discard the solids or grind them and restrain it to the previous gravy. Adjust salt and pepper. 


Tips:
 I used mushrooms to make a vegetarian gravy without dairy, usually milk or cream is added to thicken the gravy, feel free to add some for added flavor. Also, the gravy can be made with the mushroom pieces in it, but I like the gravy just with the liquid and no pieces, you can chose to leave the mushrooms sliced.
Do not add the flour directly to the hot pan,you will end up with lumps.
