Usually served in Italian restaurants, Lobster is an
expensive meat and is considered a delicacy in fine dining. This recipe is a
subtle Italian preparation with basil,butter and lemon juice.
Preparation time:30 minutes
Serves:2
Ingredients:
2 lobster tails
1/2 cup butter
juice of 1 lemon
2 basil leaves chopped
salt as per taste
1/8th teaspoon chili powder or hot sauce or black pepper
powder(all of them will work well, you can use the one you like)
Procedure:
1.Bring a pot of water to boil and salt it well. The water
should be very lightly salty.Once the water has boiled put in the lobster and let boil for about 7-8 minutes, the lobster will start to curl. Remove from water and keep aside.
2.Once the lobster has cooled, cut off the shell and there will be a vein in the tail on the upper side which needs to be sliced and removed. Remove the shell completely and discard.
3.In a pan melt the butter and add the basil leaves and turn
off the heat and add the lemon juice.Drizzle over lobster and serve.
Tips:
Serve Warm
Can be served alongside pasta or polenta or mashed potatoes.
Olive oil can also be used instead of butter.
If you like garlic,a clove of garlic can also be chopped and added along with basil,make sure you saute the garlic for a minute for the raw flavor to go away.
Capers can also be added along with basil to the sauce. Canned capers are a bit salty so take precaution while adding capers and salt.
For a thicker sauce, the egg yolks can be whisked in a pan
on a very low flame until they thicken and turn light in color, you might need
to remove the pan from heat occasionally to prevent the eggs from becoming
scrambled. This yolk mixture can be added to the prepared lemon basil sauce and
whisked and drizzled on the lobster.
