Quail Egg Croquettes

Quail is a game bird available in the US,It is also called as Kamzu Pitta in Telugu.This recipe uses the Quail eggs soft boiled and battered and deep fried.Truly a delicacy.
Preparation time:25 minutes
Serves:10

Ingredients:
3 tablespoons all purpose flour+2 tablespoon for coating
1/2 cup milk
1 tablespoon butter
1/3 cup panko bread crumbs
salt to taste
10 quail eggs
oil for deep frying
1/2 teaspoon black pepper
1 chicken egg beaten

Preparations:
1.Bring 2 cups of water to a rolling boil(until it bubbles continuously).Gently let the quail eggs into it and  boil for 2 1/2 minutes.


2.Immediately turn off the stove and transfer the quail eggs into cold water.Gently peel the eggs.


4.Heat the butter in a pan and add 3 tablespoon flour, salt and 1/4 teaspoon pepper powder and mix well. Add more pepper if you like spice.


5.Turn down the heat to low and add milk and mix to form a smooth paste without lumps. Let the mixture cool.

6.Make a small flat disc with the paste and put one quail egg in it and roll the paste around the quail egg to coat it completely to form a croquette.


7.Heat oil for deep frying.Lay  the remaining flour in a plate season with salt and pepper and lay the bread crumbs in an another plate. Now roll the croquette in the flour and coat it evenly.

8.Dip the flour coated croquette in the beaten egg. Let all the flowing egg drip off the croquette.

9.Now roll the croquette in the bread crumbs and gently drop into the hot oil. Fry until the croquette floats in the oil and remove to drain on a paper towel.


Tips:
Serve Hot
Quail eggs are very delicate so handle them carefully, do not overcook them or they will be hard cooked.
