Bajjis are fritters fried in oil with a golden chickpea
batter. This recipe is for plantain slices dipped in a chickpea flour and deep
fried to a golden perfection.

Ingredients:
2 peeled and sliced raw plantain
2 cups besan/chickpea flour
1/4 cup rice flour
3/4 teaspoon red chilli powder
1/4 teaspoon baking soda
1 teaspoon ajwain seeds/vaamu/carrom seeds
salt to taste
1 pinch turmeric powder
1 pinch turmeric powder
oil for deep frying
1/2 teaspoon ginger garlic paste
Procedure:
1. In a bowl, combine besan, rice flour, salt, red
chilli powder, ajwain, turmeric,ginger garlic paste, baking soda and enough water to
make a slightly thick smooth batter.
2. Heat oil for deep frying in a heavy bottomed vessel and once oil is sizzling hot.
Dip each plantain slice in the batter until it is well coated and drop gently in
hot oil and fry till golden brown.
3.Drain and place on absorbent paper. Serve hot.
Tips:
The same batter can be used for any kind of fritters like
eggplant, potato sweet potato etc.
