Rajma Masala

Rajma is a punjabi preparation with red kidney beans and onion and tomato. The masala can be prepared at home, but I personally feel the store brought masala gives more flavor than the homemade masala.
Preparation time:45 minutes
Serves:4

Ingredients:
1 cup Red kidney beans soaked in water overnight
1 large onion chopped finely
3 large ripe  tomatoes pureed
1 teaspoon Ginger garlic paste
pinch of turmeric
1 teaspoon Red chili powder
1 teaspoon rajma masala
1 tablespoon Kasuri methi
6-8 green chili pureed with the tomato
2 teaspoons Oil
1/4 teaspoon cumin powder
Salt to taste
coriander leaves for garnish

Procedure:
1.Pressure cook kidney beans for 2 whistles in salt.

2.Heat the oil in a pan and saute the onions until soft.Add ginger garlic paste and turmeric and saute for 2 minutes.

3.Add pureed tomatoes and green chili paste. Add the cumin powder, rajma masala, salt and red chili powder and mix well and let simmer for 5 minutes.

4.Add the cooked red kidney beans along with the water it is cooked in. Add the kasoori methi and cook for about 10-15 minutes until the gravy is absorbed by the kidney beans. Let sit for some time for the beans to absorb more flavor.

Tips:
Serve warm with steamed rice, jeera rice or roti with a dollop of cream in top.

Amchur powder can also be added for a tangy taste.
