Palakura Bangaladumpa-Spinach Potatoes

This is a very healthy preparation with spinach and potatoes.
Preparation time:40 minutes
Serving:6


Ingredients:

4 Cups of peeled and cubed potatoes
2 tablespoons oil
1/2 teaspoon cumin seed
4 red chilies
1/4 teaspoon turmeric
4 cups spinach leaves(pureed with green chilies)
1 tablespoon kasoori methi(dry methi)
1 teaspoon salt
3 cloves garlic finely chopped
1/2 cup onions chopped
1/4 teaspoon red chili powder
6 Green chilies

Procedure:
1.Boil water until it bubbles continuously ,add some salt to it and add the potato cubes to it. Microwave on high for 10-12 minutes. Your potatoes should be cooked but still firm enough to retain shape. Drain the water completely.

2.Heat oil in a different pan over medium-high heat. Add the cumin seeds, curry leaves, garlic and turmeric and stir until mustard seeds splutter

3. Add Onions and stir for 4-5 minutes until soft.

4.Add the spinach puree, kasoori methi, salt and Mix it well.


5.When the spinach comes together into a thicker gravy add the potatoes and let simmer for about 5 minutes and turn off the stove.

Tips:
This preparation tastes great with rice and roti.
