Blackbean Loaf

This mixture can be used for making burgers, meatless meatballs as well as meatless meatloaf. Skip the egg for vegan.
Preparation:  1 1/2 hour
Serves: 8

Ingredients:
1/2 teaspoon chat masala or amchur powder
1/4 cup corn
1/4 cup yellow bell peppers
2 small sweet potatoes (about 1 pound pressure cook for 1 whistle,do not get them mushy)
1/3 cup millet dry(cook it with water)
1/2 cup oats (ground to a coarse flour)
2 cups cooked black beans(they should be firm and should hold shape,pressure cook for 1 whistle)
1/2 cup onion
2 pinches turmeric
1 teaspoons cumin(or cumin powder)
1 teaspoon chili powder
6 green chilies minced
1 tablespoon grated ginger
 salt per taste
1 teaspoon ghee/butter/oil of your choice
5 cloves garlic minced
1/2 teaspoon coriander powder

Procedure:
1.In a bowl take the beans and mash them with a spoon. They should be half mashed.Keep in mind not to add any water or your burgers or loaf won't hold shape

2.Now add the millet and the sweet potato and mix.

3.In a small pan heat the ghee and saute the cumin,garlic,ginger and green chili.

4.Add this to the bean mixture and add in the onion, cumin, corn, oats, bell peppers and the masalas and mix.


5.Heat the oven to 350 degrees.Grease a loaf pan and transfer the mixture to the pan and bake for about an hour until it gets firm.



Tips:
This can be served with any bread or had as is with the redpepper sauce.
Millet can be substituted with quinoa too.
For the burgers or meatballs just shape them to patties,roll them in a beaten egg,coat them with breadcrumbs and line them on the baking sheet and bake for about 40 minutes.
