Sandesh is a dessert made of milk and sugar and is of bengali origin.There is very slight variation between kalakand,sandesh and kova.For kova the milk is just boiled with sugar until it reaches a thick consistency.In sandesh the milk is curdled and made to balls.In kalakand ,half the milk is curdled and mixed to boiling milk ,until the milk reaches the kova consistency.I stumbled upon this recipe when I had some curdled milk and was looking for what to do with it.
Preparation time:30 minutes
Serves: 18-20 small laddus
2 liters full fat milk
juice from 1 lemon
3/4 cup sugar
1 teaspoon Cardamom Powder
20 Raisins
Procedure:
1.Heat the milk in a pan and when it comes to a boil add the lemon juice and keep stirring until the milk is curdled. Sieve the whey and let all the water drain from the paneer.
2.In a pan take 1 tablespoon of water and add the sugar and cardamom powder and let come to a bubble.
3.Add the paneer to the sugar and keep stirring until all the water is gone and the paneer becomes thicker and turn off the stove.
4.When warm enough to handle, make roundles with your hand and press a raisin on top for decoration.
Tips:
Do not burn you paneer or milk.Keep stirring to avoid burning.
