Parathas are flatbreads stuffed with vegetables or meat or cheese and rolled out and pan roasted.Paneer Paratha is my favorite amongst all.
Preparation time:30 minutes
Serves: 4 people
Ingredients:
2 cups Atta flour
1 teaspoon of oil
Salt to taste
1/2 pounds paneer grated
2 Green Chilli, minced
1/3 cup onion finely chopped
1/4 teaspoon turmeric
1/2 teaspoon red chili powder
1/2 teaspoon dhaniya powder(coriander)
Procedure:
1.Take the flour in a large bowl and mix it with 1 cup of water.(you can add oil and salt to your atta if you like).Knead the dough well for 5 minutes to a smooth dough and set aside covered for 15 minutes.
2.On a pan heat the oil and add the onions,turmeric, and green chili and saute until onions are soft.
3.Add salt and red chili powder and mix well
4.Add the grated paneer and mix well.
5.Take a small piece of dough about the size of a lemon and roll it out into a 2 inch diameter disc using a rolling pin.
6.Place the stuffing in the center
7.Fold the edges of the dough over the filling and pinch together on top.
8.Gently press down with your palm and dust the dough and roll it out gently into a circle,make sure your stuffing is not popping out,that means you are rolling with too much pressure.
9.Heat a pan,spray some ghee or oil or butter and place the paratha on it. Cook it for few seconds.
10.Flip the paratha and let cook on the other side.Repeat for all the parathas.

Tips:
Parathas go well with any tangy pickle(tomato,amla,lemon are my favorite) and dahi.You can also serve with any gravy curry that is not too strong,or it will mask the taste of the paratha.
