Kobbari Louju

This is a coconut and jaggery Indian sweet preparation that is crunchy from the coconut and sticky from the jaggery.
Preparation time:30 minutes
serves:20

Ingredients:
2 Cups Fresh grated Coconut
1-1 1/2 cups Jaggery(as per sweet levels)
1/2 teaspoon cardamom powder
 2 teaspoons Ghee

Procedure:
1.Heat ghee in a pan and add coconut and fry for 2 minutes to toast the coconut.This gives a nice crunch to the coconut.


 2.Add the grated jaggery and add about 2 tablespoons of water and cardamom powder and keep stirring on a medium flame until the jaggery mixture comes to a single sticky mass.



3.While it is still warm to handle make roundles from the mixture and keep aside.

Tips:
Do not add too much water or your jaggery might get burnt or might get too sticky when trying to dry out the water.
